I make my own damn wedding cake (part 2)

What a spread! It was so much fun to be part of this magical royal wedding! I mean, look at this beautiful table filled with baked goods created by the wedding party and the wedding cake was created by the bride herself.

This beautiful cake is a gluten free red velvet cake with vegan "cream cheese" icing.

It all started by the bride and her friends coming over to Bake Austin and bringing ingredients, recipes and getting their hands into all the yummy goodness. This is a DIY wedding at it's best!

Bake Austin hosted an adult Valentine's class with Kitchen Underground. We had 3 couples over in our home based bakery and baking school. The champagne was flowing and guitar strings were strung.

Filling raspberries with chocolate and dipping strawberries in chocolate, drizzled with white chocolate.

Here we made chocolate bowls and even attempted to make those fancy chocolate balls... it almost worked. We needed a mold. Next time!

It doesn't get much better. Chocolate, blueberries and whipped cream, topped with a sprig of mint.

I could have not imagined a better night! Everyone was so nice and fun and I would bake with these people anytime again! Thank you!

Valentine's Cookie Class

We had a fun Valentine's cookie class last weekend and we ended up with tons of cookies.

Rolling out and cutting out heart shapes from fondant. We then played out the fondant hearts to dry a bit before stamping them.

Swedish Princess Cake

People often ask me what a Swedish princess cake is and I have my own version of how to explain this cake but first here is what wikipedia has to say:
​
"A princess cake (prinsesstårta in Swedish) is a traditional Swedish layer cake or torte consisting of alternating layers of airy sponge cake, pastry cream, and thick-domed layer of whipped cream. This is topped with marzipan, giving the cake a smooth rounded top. The marzipan overlay is usually agree, sprinkled with powdered sugar, and often decorated with a marzipan rose.
​The original recipe first appeared in the 1948 Prinsessornas Kokbok (cookbook), which was published by Jenny Akerstrom, a teacher of three  of Prince Prince carl Duke of Vaestergoetland. The cake was originally called grön tårta (green cake), but was given the prinsesstårta or "princess cake" because the princesses were said to have been especially fond of the cake. The princesses were Princess Margaretha (1899-1977 - later Princess of Denmark), Princess Martha (1901-1954, later Crown Princess of Norway), and Princess Astrid (1905-1935, later Queen of the Belgians). The cake is widely featured in Tom McNeal's book Far Far Away." -wikipedia

This is a long detailed description of the history and the make of the cake.
I would say it is probably the best cake around. It is light & rich at the same time. It's a bit tricky to put together and overtime I make one I am a little in awe about the construction as well as the simple beauty of it. 
It is filled with the most delightful ingredients: genoise cake, raspberry preserve, pastry cream (similar to a vanilla custard), whipped cream and marzipan (imagine ground almond meet rose water meet powdered sugar). 
I think this cake had me at marzipan. My culinary colleagues know how much I love marzipan and I will never pass up good marzipan! 
Maybe you wonder why I am such an expert in this cake. I am German, not Swedish after all. But in Germany we eat this cake as well and we are really good at domed cakes, tortes and we use marzipan instead of fondant. Matter of fact I knew nothing about fondant until I moved here to the US. I know this cake well and this cake knows me well. :) A match made in a cloud of whipped cream. Need I say more?!

I think, in my humble opinion, that everyone should have a slice of this delectable cake at one point in their life. If any of these ingredients speaks to you at all, you should splurge and order a Swedish Princess cake.

A Swedish Princess Cake is great for birthdays, weddings, bridal showers, and really any celebration where cakes are needed. Or just because you want a delicious cake that you can't just get anywhere.
