Greece has a special place in my heart! This is where my solo travels started. In 1978 my parents sent me on a trip to Thessaloniki, to visit another girl my age. I had never met her before, but we became fast friends. I remember seeing carts with watermelons, and we picked figs and cherries from trees. On the weekends we visited the beaches and I still have the dolphin ring I bought when I was there. I went back to Greece every summer for many years. ​

🏛️ Legends and Heroes: Greece is a land steeped in myths and legends. I bet you read a bunch of stories about Greek heroes! It's where powerful gods and fearless heroes roamed. You have heard of Zeus, the king of the gods, or Hercules, the mighty hero!? These legendary figures have inspired countless tales of courage and adventure.
🏝️ The land of the Sun & Islands: Did you know that Greece is made up of over 6,000 islands? Also, Greece is known to be the sunniest country in the world. But that's not all! Greece also has the longest coastline in all of Europe.
🪀Home of the Yo-Yo: The yo-yo is believed to have originated in ancient Greece, specifically in the region of the Mediterranean. The toy was made of wood, metal, or terra cotta, and it was used for various purposes, including as a toy and a weapon in hunting and warfare. The ancient Greek yo-yos were quite different from the ones we use today, but they laid the foundation for the development of this popular toy throughout history. Cool, right?!

🇬🇷Area of Greece – 131,957 square km (50948 square miles), 15,000 km of that is coastline.
🏔Highest Mountain – The highest Mountain in Greece is Mount Olympus at 2918 meters (9573 feet).

Ingredients:

• 2 cups all-purpose flour
• 1 cup warm water
• 1 tablespoon yeast
• 1 tablespoon sugar
• 1 teaspoon salt
• Sesame seeds

Instructions:

1. Mix the yeast, warm water, and sugar in a bowl. Let it sit for 5 minutes until it becomes frothy.
2. In a separate bowl, combine the flour and salt. Gradually add the yeast mixture and knead until the dough is smooth.
3. Divide the dough into small portions and shape them into round rings.
4. Place the koulouri rings on a greased baking sheet and let them rise for about 30 minutes.
5. Brush each ring into warm water and then coat them generously with sesame seeds.
6. In the meantime preheat the oven to 375°F (190°C) and bake the Koulouri for 20-25 minutes, or until they turn golden brown.

Ingredients:

• For the chicken:
• 1 pound boneless skinless chicken breast
• 3 Tbsp olive oil
• 2 Tbsp lemon juice
• 2 Tbsp red wine vinegar
• 3 tsp minced garlic
• 1 tsp Dijon mustard
• 1 tsp dried oregano
• 1/4 tsp salt
• 1/4 tsp black pepper
• For the kabobs:
• 1 red bell pepper
• 1 yellow bell pepper
• 1 green bell pepper
• 1 red onion
• For the Tzatziki sauce:
• 1/2 cucumber
• 1  cup plain Greek yogurt
• 2 Tbsp olive oil
• 2 Tbsp fresh mint and/or dill
• 1 Tbsp lemon juice
• 1 medium clove garlic
• 1/2 teaspoon fine sea salt
• 1-2 tsp olive oil to drizzle

To make the Tzatziki Sauce: 

1. Place the grated cucumber in a clean kitchen towel or cheesecloth. Squeeze out any excess moisture from the cucumber.
2. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and chopped dill.
3. Stir the ingredients together until well combined.
4. Season with salt and pepper to taste. Adjust the seasoning according to your preferences.
5. Cover the bowl and refrigerate the tzatziki sauce for at least 1 hour to allow the flavors to meld together.
6. Before serving, give the sauce a quick stir. Taste and adjust the seasoning if necessary.
7. Serve the tzatziki sauce as a dipping sauce for the chicken kabobs or any other dish of your choice.

Instructions:

1. Begin by cutting the chicken into approximately 1 1/2-inch cubes. Place the chicken cubes in a large bowl.
2. Add olive oil, lemon juice, dijon mustard, garlic powder, oregano, salt, and pepper to the bowl with the chicken.
3. Mix the chicken and marinade together until well combined.
4. Allow the chicken to marinate in the refrigerator for 15-30 minutes.
5. While the chicken is marinating, cut the red bell pepper, green bell pepper, yellow bell pepper, and red onion into 2x2 inch pieces, which will be used for skewering later.
6. Preheat the grill to medium-high heat.
7. Take skewers and assemble them by alternating the marinated chicken cubes, bell pepper pieces, and red onion pieces. Leave a small space between each ingredient on the skewer.
8. You should be able to make approximately 8 skewers in total.
9. Place the assembled skewers on the preheated grill.
10. Grill the skewers for 8-10 minutes on each side, or until the chicken is cooked through and the vegetables have become tender.
11. Once cooked, remove the skewers from the grill.
12. Serve the kabobs with tzatziki sauce and any additional sides you prefer, such as potatoes, rice, or quinoa.
13. This recipe serves 4 people, with each person having 2 kabobs.
