UNICORN COOKIES

Unicorn cookies are the best! They make wonderful gifts and fabulous treats! 
Don't forget to add a little extra magic to them by thinking happy thoughts while baking or singing a song. You can taste it when the chef is happy!

Makes 25-27 cookies
INGREDIENTS:
2 1/2 cups All-Purpose flour *
1 cup powdered sugar

1 3/4 sticks of cold butter cut into small pieces 
1 egg

INSTRUCTIONS:

Measure all ingredients out and place on your work surface. Always double check that you have the correct amount.
Pour flour on work surface, make a mold and place all the rest of the ingredients into the mold.
Start mixing the dough, rub the butter with your fingers until the are pea size. Star t kneading until a smooth dough forms.
Wrap dough in plastic and rest in fridge for 1 hour. 
Unwrap the dough and cut into four sections with the bench scraper, rewrap 3/4 of the dough in the plastic and set 1/4 of the dough on a floured surface. 
Preheat oven to 350 Fahrenheit.
​Start rolling out dough, rotating the dough to ensure it does not stick to the surface. 
When the dough is about 1/4" thick you can start cutting out cookies. Keep working the dough and cutting out cookies until there is no more dough left.
Place cookies on a parchment covered cookie sheet and bake for 8-10 minutes until the edges are just golden brown.  Set aside to cool completely. 

To decorate:

For the glaze: 
Mix 2 cups of powdered sugar with 2-3 Tbsp water until smooth.
If you have any white food coloring you can add a few drops. Add a 1/4 tsp extract to the glaze to add extra flavor.

Dip the cookies into the glaze and let the cookies dry to the touch (about 30-60 minutes) before continuing the decoration. 
You can either make colored glaze, just add a little less water, so it is thicker and use it as decoration or you can make royal icing. See the recipe below.
Decorate with sprinkles, colorful cereal, chocolate chips, etc. Make it yours!

You can store your cookies on a plate for a couple of days. If you want to store them for up to a week please store them in an airtight container.
