UNICORN TOASTER PIES

INGREDIENTS:
2 cups All-Purpose flour *

2 sticks of cold butter cut into small pieces
2 Tbsp milk
1 Tbsp sugar 

1 tsp salt 
1 egg
​flour for dusting
*Alternative: 
You can use 1 cup of All-Purpose flour and 1 cup of Whole-Wheat flour
Or to make it Gluten Free:
Use "Cup 4 Cup" flour and just replace it for the All-Purpose flour above. I am not affiliated with this company but i found it to be a good replacement. If you want to find it, here is a link to locate a store who carries this brand. https://www.cup4cup.com/store-locator/
Otherwise use any of your favorite GF All-Purpose flour mix.

INSTRUCTIONS:

1. Measure all ingredients out properly and place on a clean work surface. (This is a great time to teach your kids how to measure)

2. Using a butter knife cut the cold butter into small pieces. Place all the ingredients in the mold.

4. Start rubbing the butter and flour between your fingers until it all combines into a dough. Working quickly, as not to melt the butter.

5. Keep kneading the dough until it comes together to a nice smooth dough. 
6. Wrap dough into plastic wrap and rest in fridge for 1 hour minimum. After the 1 hour resting time, take dough out and cut into 4 sections.
7. cover a work surface with flour and start rolling the dough out. Make sure it does not stick to the surface. Roll it out to 1/4" thick or less, really the thinner the better.
8. Start cutting out unicorn heads until no dough is left. 
9. Make an egg wash by mixing 1 egg with either 1-2Tbsp water or milk. Prepare a cookie sheet with parchment paper and preheat the oven to 350F. 
10. Using one of the piping bags or a ziplock bag with the corner cut off, fill the toaster pies just in the center.
11. Brush the edges of the unicorn heads right around the filling with the egg wash and then place the lids on top of the bottoms and press edges together, to ensure no filling can escape.
12. Poke the heads with a fork so that steam can escape. Brush with egg wash.
13. Bake the cookies on the parchment paper covered cookie sheet for 14-16 minutes or until golden brown. 
14. In the mean time prepare the glaze and get your sprinkles out. I like to use colorful cereal as well. Once your toaster pies have baked let them cool to room temp.
15. Using a spoon or a butter knife spread the glaze over the toaster pies and sprinkle with sprinkles. 
16. Enjoy!

Glaze Ingredients:
2 cups powdered sugar
​2-3 Tbsp water or milk
